I'm going to be installing a passive heatsink on my vid card soon and would like to keep an eye on my GPU temp. I'm confident in the HS, but I'd like to keep my fans on silent mode if possible.
I've got Everest Ultimate Edt. and Speedfan. SF doesn't really seem to register temps on the card though, not sure about Everest.
EDIT: i've got a EVGA 6800, on xp sp2

Everest can on some cards (my does on my HD3870 and even my older X800). For the newer ATi cards the Catalyst Control Center will tell you under the "ATi Overdrive" under Advanced mode. Under Everest go to 'Computer' then 'Sensor' to see if it's there. If you have Vista you can enable a sidebar gadget and customize the readings it displays ('File'-> 'Preferences' then expand 'Hardware Monitoring' then to 'Vista Sidebar' then you have to enable sidebar support then customize under 'Sidebar Items')

http://www.nvidia.com/object/ntune_5.05.54.00.html Nvidia Monitor is included with the Nvidia Ntune Package. It monitors the GPU temp and Ntune can probably adjust the clock for that card if you feel the need to push it.
if you want to log the information, rivatuner http://downloads.guru3d.com/download.php?det=163 has a lot more advanced D3D and gpu features and can monitor the GPU temp and control the clock speed.

EVGA released a program called EVGA Precision. It can control core clock and mem clock (so you can under clock them to get it to run cooler) as well as monitor the temperature. It also can control the fan speed if you have a fan on it. It can also have a FRAPS type display while playing games that displays the clocks, temp, and FPS.
I use it with my SLI'd EVGA 7800GTX's. It's really nice to be able to see both GPU temps in game in case one starts over heating.
rivatuner is what ive always used. you have to play with the program a little to get exactly what you want out of it and get all of the plugins working but it's great once you get it all setup.
