A uC can only perform one operation at a time. In an FPGA, you can perform as many or a few simultaneous operations at a time. You are only limited by how much physical space you have available on the FPGA (and a couple other deisgn considerations, but you get the point).
I designed a small processor, turing complete, only does one instruction, and I plan to implement an 8bit version in 74 series gates, or maybe 4xxx CMOS.

If you haven't already, try and find one of the officers of HKN. They may be able to get you one for pretty cheap. This is purely speculative, as I have an extremely limited understanding of the workings of HKN, other than they often provide parts kits for some EE classes. I don't know any names either, so good luck.
