I have half a pound of swiss cheese from a deli, that has been in my refrigerator since March 15th, when it was forgotten in my office in leiu of St. Pats celebrations. It was intended to be consumed with corned beef, but alas, I had forgotten it. The corned beef was consumed with rarebit, which is better anyway, especially for St. Pats.
But I also enjoy swiss cheese with crackers. I now have said crackers. The cheese, though quite old, appears to be quite edible, with not a shred of mold on it.
My dilemma is this: I haven't eaten in a few days. I just forget sometimes. And I'm hungry. But I'm not sure this cheese is still good, although it looks fine.
I'm going to eat it. If I don't post for a few days, it's because I'm dead.

I'd eat it, definitely. I have cheese that's at least that old... as long as its refrigerated and in some sort of packaging (i.e. saran wrap), you're good.

Eat it. Even if the cheese is moldy, just cut off the mold and eat what's left. Honestly, have you ever seen a cheese factory? Cheese is just curds that have set on a shelf molding for five years. All they do is cut the mold off the cheese round, subdivide it and sell it.
